Spicy Shrimp Skewers with Black and White Bean Relish
This recipe is from my new son-in-law Jim. He serves it with spicy shrimp skewers. The flavors and textures are wonderful. Try it as a side dish with chicken or I love it just by itself. Enjoy!

2 cups cooked black beans, drained and rinsed

2 cups cooked great northern beans, drained and rinsed

2 cups of cooked corn kernels, cut from the cob

1 large red pepper, finely chopped

2 large garlic cloves, minced

2 jalapeno peppers, seeded and finely chopped

3/4 cup sweet onion, chopped

1/4 cup cilantro, chopped

Juice of 2 limes

1/2 cup extra virgin olive oil

Salt and freshly ground pepper
In a large bowl combine all of the ingredients and stir to mix well. Let it set in the refrigerator at least 1 hour before serving. I like to make ahead more than 1 hour. If you are lucky to have some leftover it is great the next day. Delicious...
